Out of all these, which one is your favorite? From one pastry chef to another?
That’s a tough one, but for pastry, I definitely spend a lot of quality time with my giant copy of the Professional Pastry Chef — so much information, so many recipes (for me to modify,) and of course, what good is a book with no pictures in it? This one has loads and was well worth the money.
